Ingredients/Components

  • chicken stock
  • small baking potatoes, peeled and chopped - 3 item
  • chopped onion - 1/2 c
  • clove garlic, minced - 1 item
  • can creamed corn - 1 oz
  • small carrot, diced - 1 item
  • finely chopped green pepper - 2 Tbsp
  • chopped cauliflower - 2 Tbsp
  • celery seed - 1/2 tsp
  • celery salt - 1/2 tsp
  • curry powder - 1/2 tsp
  • white pepper - 1/4 tsp
  • dash of cayenne pepper - 1 item
  • butter - 1 Tbsp
  • potato flakes as thickener - 1/2 c
  • salt if desired - 1 item

How to make vegetable chowder:

Combine stock, vegetables and seasonings in a large stock pot. Bring to a boil; reduce heat and simmer about 45 minutes or until vegetables are well cooked. Stir in butter and potato flakes to thicken. Taste for seasoning, salting if desired. Serves 6.
