Vegetable chowder
Ingredients/Components
- chicken stock
- small baking potatoes, peeled and chopped - 3 item
- chopped onion - 1/2 c
- clove garlic, minced - 1 item
- can creamed corn - 1 oz
- small carrot, diced - 1 item
- finely chopped green pepper - 2 Tbsp
- chopped cauliflower - 2 Tbsp
- celery seed - 1/2 tsp
- celery salt - 1/2 tsp
- curry powder - 1/2 tsp
- white pepper - 1/4 tsp
- dash of cayenne pepper - 1 item
- butter - 1 Tbsp
- potato flakes as thickener - 1/2 c
- salt if desired - 1 item
How to make vegetable chowder:
Combine stock, vegetables and seasonings in a large stock pot. Bring to a boil; reduce heat and simmer about 45 minutes or until vegetables are well cooked. Stir in butter and potato flakes to thicken. Taste for seasoning, salting if desired. Serves 6.Recipe categories: Low calorie, Soups & stews, Chowders.
