Cheesy corn chowder
Ingredients/Components
- milk - 3 c
- salt
- butter - 1/4 c
- cornstarch - 3 Tbsp
- shredded carrots - 1 c
- chopped onion - 1/4 c
- shredded Cheddar cheese - 1 c
- white pepper - 1/4 tsp
- celery salt - 1/4 tsp
- chicken broth*
- cans creamed corn - 2 item
- hash browns - 4 c
- green peppers optional - 1/4 c
- diced cooked chicken*
How to make cheesy corn chowder:
*Can substitute 2 cans cream-style chicken for broth and diced chicken. Add water to make 3 cups.Saute onion and green peppers, if desired, in butter in a large Dutch oven. Add broth, chicken salt, celery salt and pepper. Heat to boiling, add carrots and hash browns. Cook over low heat until carrots are tender. Stir in 2 1/2 cups milk and corn and heat just to a boil. Blend cornstarch in remaining 1/2 cup milk until smooth. Stir mixture into chowder. Cook until smooth or just to a boil, stirring constantly. Garnish with chopped parsley.
