Zucchini soup
Ingredients/Components
- salt - 1/2 tsp
- butter - 2 Tbsp
- heavy cream - 1/2 c
- clove garlic, minced - 1 item
- curry powder - 1 tsp
- chicken stock
- zucchini, sliced thin - 1 lb
- chopped shallots or onions - 2 Tbsp
How to make zucchini soup:
Put first 4 ingredients in a pan with lid. Simmer until tender and steamed but not brown. Add stock, cream and seasonings. Pour into food processor and blend for approximately 30 seconds. Return to soup pot and heat thoroughly. This soup can be made the day before. Also you can substitute the following for the zucchini: Asparagus, broccoli, spinach or carrots.Recipe categories: Soups & stews, Main dish, One Dish meal.
