Turkey wild rice soup
Ingredients/Components
- butter or margarine - 1/2 c
- salt - 1/2 tsp
- all-purpose flour - 1/2 c
- pepper - 1/4 tsp
- dried parsley flakes - 1 tsp
- medium onion, chopped - 1 item
- diced, cooked turkey or chicken - 2 c
- carrots, sliced - 2 item
- cooked wild rice - 2 c
- celery ribs, diced - 2 item
- chicken or turkey broth - 4 c
- light cream or powdered milk - 2 c
How to make turkey wild rice soup:
In large kettle, saute onion, celery and carrots in butter until onion is transparent. Reduce heat. Blend in flour and cool until bubbly. Gradually add broth, stirring constantly. Bring to a boil; boil for 1 minute. Reduce heat; add wild rice, cream, turkey, parsley, salt and pepper. Simmer for 20 minutes.
