Ingredients/Components

  • butter or margarine - 1/2 c
  • salt - 1/2 tsp
  • all-purpose flour - 1/2 c
  • pepper - 1/4 tsp
  • dried parsley flakes - 1 tsp
  • medium onion, chopped - 1 item
  • diced, cooked turkey or chicken - 2 c
  • carrots, sliced - 2 item
  • cooked wild rice - 2 c
  • celery ribs, diced - 2 item
  • chicken or turkey broth - 4 c
  • light cream or powdered milk - 2 c

How to make turkey wild rice soup:

In large kettle, saute onion, celery and carrots in butter until onion is transparent. Reduce heat. Blend in flour and cool until bubbly. Gradually add broth, stirring constantly. Bring to a boil; boil for 1 minute. Reduce heat; add wild rice, cream, turkey, parsley, salt and pepper. Simmer for 20 minutes. Yields 10 to 12 servings (about 3 quarts).
