Tortellini soup
Ingredients/Components
- pkg - 1 oz
- water - 1/2 c
- grated Parmesan cheese - 1 item
- chopped onion - 1 c
- can tomato sauce - 1 oz
- sliced zucchini
- thinly sliced carrots - 1 c
- oregano - 1/2 tsp
- basil - 1/2 tsp
- chopped parsley - 3 Tbsp
- Italian sausage - 1 lb
- beef broth - 5 c
- medium green pepper, chopped - 1 item
- dry red wine or water - 1/2 c
- cloves garlic, sliced - 2 item
- chopped peeled tomatoes - 2 c
How to make tortellini soup:
Remove casing and brown sausage. Remove sausage; drain and reserve 1 tablespoon drippings. Saute onion and garlic in drippings. Add beef broth, water, wine, tomatoes, carrots, basil, oregano, tomato sauce and sausage. Bring all to a boil, then reduce heat and simmer 30 minutes uncovered. Skim fat from soup and stir in zucchini, tortellini, parsley and pepper. Simmer covered 35 to 40 minutes.
