Ingredients/Components

  • chicken breasts, boned, halved and skinned - 3 item
  • butter - 2 Tbsp
  • flour - 1/4 c
  • salt and pepper - 1 item
  • chopped shallots or onions - 1 Tbsp
  • dry white wine - 1/4 c
  • chopped fresh tarragon or 1/2 tsp - 1 tsp
  • chicken broth - 1/4 c

How to make tarragon chicken breasts:

Sprinkle chicken with salt and pepper and dredge in flour; reserve remaining flour. In large skillet heat butter, add chicken and brown on both sides. Transfer to a heated platter. Add shallots to skillet and saute briefly. Add wine. Cook liquid over high heat until nearly evaporated. Add reserved flour and make a thick paste. Sprinkle with tarragon and stir in chicken broth. Return chicken to skillet, cover and cook until tender, about 25 minutes.
