Tarragon chicken breasts
Ingredients/Components
- chicken breasts, boned, halved and skinned - 3 item
- butter - 2 Tbsp
- flour - 1/4 c
- salt and pepper - 1 item
- chopped shallots or onions - 1 Tbsp
- dry white wine - 1/4 c
- chopped fresh tarragon or 1/2 tsp - 1 tsp
- chicken broth - 1/4 c
How to make tarragon chicken breasts:
Sprinkle chicken with salt and pepper and dredge in flour; reserve remaining flour. In large skillet heat butter, add chicken and brown on both sides. Transfer to a heated platter. Add shallots to skillet and saute briefly. Add wine. Cook liquid over high heat until nearly evaporated. Add reserved flour and make a thick paste. Sprinkle with tarragon and stir in chicken broth. Return chicken to skillet, cover and cook until tender, about 25 minutes.Recipe categories: Chicken, Main dish, Chicken breast.
