Tabouli salad
Ingredients/Components
- salt - 1/2 tsp
- boiling water
- olive oil - 1/4 c
- ground black pepper - 1/4 tsp
- toasted sesame seed - 1 tsp
- cucumber - 1 item
- juice of 2 lemons
- bunch fresh parsley - 1/2 item
- large fresh tomato - 1 item
- cut grain bulgur wheat* - 1 c
- scallions including greens - 2 item
How to make tabouli salad:
Saute the wheat in the oil until slightly browned. Remove from heat; stir in the boiling water. Cover and let sit for 1 hour, then drain.Meanwhile, finely chop the scallions, tomato, cucumber and parsley (food processor or by hand). Mix chopped vegetables with the drained wheat. Add sesame seed, salt and pepper; mix well. If desired, add additional olive oil, salt or pepper. Serve cold. Especially good with hamburgers or gyros (lamb sandwiches!).
