Ingredients/Components

- vinegar - 2 3
- olive oil - 1 c
- black beans - 1 2
- large green peppers - 3 item
- large onions - 4 item
- or 3 bay leaves - 2 item
- large fresh tomato - 1 item
- garlic cloves fresh - 5 item
How to make black beans:
Wash beans well until water is clear; cover beans in a large pot with water. Soak overnight.Do not drain water and add the next morning a little more water. Then add 1 or 2 large onions, cut into big pieces; 1 large green pepper, cut into big pieces; 1/2 cup olive oil; fresh tomato, chopped and bay leaves. Cook until tender and add salt to taste.
In a small pot, mix 1/2 cup olive oil, fresh garlic (minced well), 1 large onion (chopped fine) and 1 large green pepper (chopped fine); add to beans and stir well. Cook again until beans are thick. After beans are cooked, add vinegar. Serve over steamed white rice and garnish with onions.
