Ingredients/Components
- salt - 1 2
- flour - 1 c
- pepper - 1/4 tsp
- onion, sliced - 1 item
- carrots, sliced - 2 item
- beef round or chuck - 2 lb
- stewed tomatoes or canned
How to make swiss steak:
Have beef cut 1 or 1 1/2 inches thick. Wipe with a cloth. Rub seasoned flour (flour mixed with the salt and pepper) into steak or pound in with wooden mallet. Brown meat in a little fat in a heavy skillet or Dutch oven (brown on all sides). Add veggies; cover and simmer gently for about 1 1/4 hours, or until meat is tender.If preferred, seared meat and veggies may be placed in a casserole dish, covered and baked in a slow oven (300°) for 1 1/2 hours, until tender. Makes about 6 servings.
