Ingredients/Components

  • salt - 1 tsp
  • flour - 1/4 c
  • shortening - 3 Tbsp
  • pepper - 1/4 tsp
  • can tomatoes, cut up - 1 lb
  • onion, chopped - 1/2 c
  • green pepper, chopped - 2 Tbsp
  • beef round steak 1-inch thick - 2 lb

How to make swiss steak:

Combine flour, salt and pepper; pound into meat. In large skillet, brown meat on both sides in hot shortening. Top with onion and tomatoes. Cover; cook over low heat about 1 1/2 hours or until tender. Or, transfer to a 12 x 7 x 2-inch baking dish and cook covered at 350° for 1 1/2 hours. Add green pepper; cook 15 minutes more. Skim off excess fat. Thicken juices, if desired. Season to taste. Serves 6.
