Ingredients/Components
- sugar - 1 c
- vanilla - 2 tsp
- nutmeg - 1/2 tsp
- pumpkin - 2/3 c
- margarine, softened - 6 Tbsp
- powdered sugar - 1 c
- self-rising flour - 3/4 c
- pumpkin pie spice - 1 tsp
- eggs, slightly beaten - 3 item
- Beat eggs; add sugar, pumpkin and vanilla
How to make pumpkin roll:
Mix flour and spices. Beat eggs; add sugar, pumpkin and vanilla. Stir in flour mixture. Spread on greased jelly roll pan. Bake 15 minutes at 375°. Loosen and turn out on linen towel covered with powdered sugar. Roll and put in freezer to cool. While cake is cooling, mix ingredients for frosting.Pumpkin Roll Frosting:8 oz. cream cheese, softened6 Tbsp. margarine, softened1 c. powdered sugar1 tsp. vanilla Mix all ingredients together. Remove cake from freezer and carefully unroll. Spread frosting over cake. Re-roll and place back in freezer until ready to serve.Recipe categories: American, Vegetables, North american.
