Ingredients/Components

  • flour - 1/2 c
  • oil - 1/3 c
  • bay leaves - 2 item
  • beef tenderloin - 4 lb
  • packet beef bouillon - 1 item
  • dash salt and pepper to taste - 1 item

How to make swiss steak:

Preheat oven to 325°. Rub each side of meat with salt and pepper. Place meat in deep baking dish. Add enough water to cover halfway on the meat. Add the bay leaves.

Place in preheated oven and cook to a golden brown. Remove from oven; drain juices and set aside. Discard bay leaves.

In medium saucepan, heat oil to hot. Add enough flour to make a smooth sauce. Brown to a rich brown, stirring constantly. Add juices from meat to make a medium thin gravy. Add water if more liquid is needed. Add beef bouillon. Boil gravy until well blended and there are no lumps.

Place meat on plate and cut into serving slices. Return to baking dish. Pour gravy over steak, adding water if more gravy is needed. Replace in oven and cook another 30 to 45 minutes, covered, basting often until desired tenderness. Serve hot. Makes 8 servings. Preparation time: 1:30.
