Ingredients/Components

  • water
  • regular grits uncooked - 3/4 c
  • diced hot smoked sausage - 1 c
  • shredded Cheddar cheese - 1/4 c
  • butter or margarine - 2 Tbsp
  • salt - 1/4 tsp
  • all-purpose flour - 1/4 c
  • large egg, beaten - 1 item
  • milk - 1 Tbsp
  • Italian-seasoned breadcrumbs - 3/4 c
  • vegetable oil - 1 item
  • poached eggs - 1 item
  • Creole sauce - 1 item
  • Cover, reduce heat and simmer, stirring occasionally, 20 minutes or until done
  • green pepper, cut into strips - 1 item
  • cloves garlic, sliced - 2 item
  • bay leaf - 1 item
  • butter, melted - 2 Tbsp
  • paprika - 2 tsp
  • can tomatoes - 1 item
  • tomato juice - 1/2 c
  • Worcestershire sauce
  • cornstarch

How to make eggs creole:

Bring water to a boil, gradually stir in grits and return to a boil. Cover, reduce heat and simmer, stirring occasionally, 20 minutes or until done. Remove from heat and stir in sausage and next 3 ingredients. Spoon into a lightly greased 13 x 9 x 2-inch pan; pressing firmly and smoothing surface. Cover and chill 24 hours. Turn grits out onto wax paper and cut out rounds with a biscuit cutter (reserve remaining for other use). Sprinkle rounds with flour; combine egg and milk. Dip into egg mixture and dredge in breadcrumbs. Pour oil to 1-inch depth; fry grits in hot oil over medium heat, 1 to 2 minutes until lightly browned; drain on paper towels. Place 2 rounds on plate and top with poached egg and Creole Sauce.Creole Sauce:1 medium onion, cut into strips1 green pepper, cut into strips2 cloves garlic, sliced1 bay leaf2 Tbsp. butter, melted2 tsp. paprika1 can tomatoes1/2 c. tomato juice1 1/2 Tbsp. Worcestershire sauce1 1/2 Tbsp. cornstarch1/2 c. water Cook first 4 ingredients in butter over medium heat until vegetables are crisp-tender. Stir in paprika and next 3 ingredients; simmer 5 minutes until mixture is reduced by one-fourth. Combine cornstarch and water; stir into sauce and return to a boil, stirring constantly. Boil 1 minute. Remove bay leaf; serve warm.
