Ingredients/Components

  • sugar
  • cinnamon - 1 tsp
  • eggs - 2 item
  • milk - 1 c
  • salt - 1/4 tsp
  • butter - 1/2 c
  • nutmeg - 1/4 tsp
  • baking powder - 2 tsp
  • all-purpose flour
  • raisins, chopped - 1/2 c
  • pecans or walnuts, chopped - 1/4 c
  • canned sweet potatoes, mashed

How to make sweet potato muffins:

Preheat oven to 400°. Grease 1 1/2-inch muffin tins. Cream butter and sugar; add eggs and mix well. Blend in sweet potatoes; sift flour with the baking powder, salt, cinnamon and nutmeg. Add alternately with the milk. Do not overmix. Fold in the nuts and raisins. Fill the greased muffin tins 2/3 full. Bake at 400° for 25 minutes.
