Sweet potato muffins
Ingredients/Components
- sugar
- cinnamon - 1 tsp
- eggs - 2 item
- milk - 1 c
- salt - 1/4 tsp
- butter - 1/2 c
- nutmeg - 1/4 tsp
- baking powder - 2 tsp
- all-purpose flour
- raisins, chopped - 1/2 c
- pecans or walnuts, chopped - 1/4 c
- canned sweet potatoes, mashed
How to make sweet potato muffins:
Preheat oven to 400°. Grease 1 1/2-inch muffin tins. Cream butter and sugar; add eggs and mix well. Blend in sweet potatoes; sift flour with the baking powder, salt, cinnamon and nutmeg. Add alternately with the milk. Do not overmix. Fold in the nuts and raisins. Fill the greased muffin tins 2/3 full. Bake at 400° for 25 minutes.Recipe categories: Breads, Quick breads, Muffins.
