Ingredients/Components
- eggs - 4 item
- sugar - 2 c
- vegetable oil - 1 c
- flour
- salt - 1 tsp
- soda
- cream of tartar - 2 tsp
- cinnamon - 1 tsp
- grated zucchini - 2 c
- small can crushed pineapple - 1 item
- chopped nuts - 1 c
- vanilla
How to make zucchini bread:
Makes 2 loaves. In a large bowl, whisk eggs lightly then add sugar gradually. Add oil. In a separate bowl, mix together dry ingredients, then stir into egg mixture. Add zucchini, drained pineapple, nuts and vanilla. Mix thoroughly then pour into 2 loaf pans. Bake 55 to 70 minutes in preheated 350° oven.
