Sweet potato muffins
Ingredients/Components
- sugar
- cinnamon - 1 tsp
- eggs - 2 item
- chopped pecans - 1/4 c
- milk - 1 c
- salt - 2 tsp
- butter - 1/2 c
- nutmeg - 1/4 tsp
- baking powder - 2 tsp
- all-purpose flour
- raisins - 1 item
- sweet potatoes, mashed
How to make sweet potato muffins:
Preheat oven to 400°. Grease muffin pan. Cream butter, sugar and eggs; mix well. Blend in sweet potatoes. Sift flour, baking powder, salt and spices. Add to other mixture alternating with milk. Do not overmix. Fold in nuts and raisins. Fill tins 1/2 full. Bake 25 minutes. Batter can be made ahead and refrigerated for 3 or 4 days.Recipe categories: Breads, Quick breads, Muffins.
