  • pkg - 1 oz
  • sour cream - 1 c
  • melted butter - 1/2 c
  • chopped onion - 1/4 c
  • shredded carrot - 1 c
  • can cream of chicken soup - 1 item
  • 6 c - 2 lb

How to make summer squash casserole:

Cook sliced squash and chopped onion in boiling salted water for 5 minutes. Drain. Combine soup and sour cream. Stir in carrots. Fold in squash and onion. Combine stuffing mix with melted butter. Spread 1/2 stuffing mixture in bottom of a 12 x 8 x 2-inch dish. Spoon vegetable mixture on top. Sprinkle with remaining stuffing mixture. Bake at 350° for 25 to 30 minutes.
