Stuffed zucchini
Ingredients/Components
- flour - 2 Tbsp
- butter - 2 Tbsp
- oregano - 1/4 tsp
- pimento - 2 Tbsp
- medium zucchini - 3 item
- chopped fresh mushrooms - 1 c
- Parmesan - 1/4 c
- shredded Monterey Jack - 1 c
How to make stuffed zucchini:
Cook whole zucchini in salted water for 10 minutes; drain. Cut in half lengthwise. Scoop out center, leaving 1/4-inch shell. Chop center portion and set aside. Melt butter in large saucepan. Saute mushrooms about 3 minutes. Add flour and oregano; remove from heat. Stir in Monterey Jack cheese and pimentos. Stir in reserved zucchini. Fill zucchini with mixture and sprinkle with Parmesan cheese. Broil for 3 to 5 minutes.Recipe categories: Squash, Side dish, Vegetables.
