  • flour - 2 Tbsp
  • butter - 2 Tbsp
  • oregano - 1/4 tsp
  • pimento - 2 Tbsp
  • medium zucchini - 3 item
  • chopped fresh mushrooms - 1 c
  • Parmesan - 1/4 c
  • shredded Monterey Jack - 1 c

How to make stuffed zucchini:

Cook whole zucchini in salted water for 10 minutes; drain. Cut in half lengthwise. Scoop out center, leaving 1/4-inch shell. Chop center portion and set aside. Melt butter in large saucepan. Saute mushrooms about 3 minutes. Add flour and oregano; remove from heat. Stir in Monterey Jack cheese and pimentos. Stir in reserved zucchini. Fill zucchini with mixture and sprinkle with Parmesan cheese. Broil for 3 to 5 minutes.
