Stuffed sweet potatoes
Ingredients/Components
- cinnamon - 1/4 tsp
- salt - 1/8 tsp
- chopped dates - 1/4 c
- reserved pineapple juice - 1/4 c
- large sweet potatoes - 3 item
- crushed juice pack pineapple, drained - 3/4 c
How to make stuffed sweet potatoes:
Scrub potatoes and prick with fork. Bake in 400° oven 1 hour or microwave 8 minutes until tender. Halve potatoes lengthwise and scoop out pulp. Mash and combine with a mixture of the remaining ingredients. Pile into shells.
