Stuffed onions
Ingredients/Components
- salt - 1 tsp
- butter - 2 Tbsp
- egg yolk - 1 item
- pepper - 1/4 tsp
- soft bread crumbs - 1 c
- ground beef - 1/4 c
- olive oil - 2 Tbsp
- chopped parsley - 2 tsp
- marjoram - 1/4 tsp
- large onions - 6 item
How to make stuffed onions:
Cut off root ends of onions. Peel, rinse and cut off 1/2-inch slice from top of each. Put onions in boiling salted water to cover in a large saucepan. Cook 10 to 15 minutes or until onions are slightly tender. Drain well and cool.Meanwhile, heat butter in a skillet. Stir in 1 cup bread crumbs. Turn into a small bowl and set aside. With a sharp knife, cut down around onions, about 1/4-inch from edge, leaving about 3 outside layers. With a spoon, scoop out centers and chop them. Heat 2 tablespoons oil in skillet. Add chopped onion and ground beef to heated oil. Cook until the beef is browned. Combine beef mixture with 2 cups bread crumbs, egg yolk, 2 teaspoons parsley, salt, pepper and marjoram. Lightly fill onions with the mixture. Put filled onions into a greased 2 1/2-quart casserole. Spoon buttered crumbs on top and sprinkle with remaining oil and parsley. Bake at 350° for about 1 hour. Makes 6 servings.
