Stuffed eggplant
Ingredients/Components
- sugar - 1 tsp
- salt - 1/2 tsp
- soy sauce - 2 tsp
- dry sherry - 1 Tbsp
- small onion - 1 item
- large eggplant - 1 item
- water chestnuts - 8 item
- minced fresh ginger or 1 tsp - 1 Tbsp
- pork or beef - 3/4 lb
How to make stuffed eggplant:
Wash and peel the eggplant; cut in half lengthwise and remove the seeds. Mince the water chestnuts and combine with the pork or beef, onion, ginger, sherry, soy sauce, salt and sugar. Mix well. Stuff each half of the eggplant with the mixture. Steam for 30 minutes. Serves 2.Recipe categories: Vegetables, Main dish, Low Carb.
