Stuffed eggplant
Ingredients/Components
- milk - 1 c
- butter - 3 oz
- Ritz crackers, crushed - 1 c
- grated cheese - 2 Tbsp
- salt and pepper to taste - 1 item
- onion, chopped - 1 tsp
- celery, chopped - 1 c
- medium eggplant, split lengthwise - 1 item
How to make stuffed eggplant:
Scoop out insides of eggplant and cook in salt water until tender. Drain and add other ingredients. Return to shells and place in baking dish. Sprinkle top with additional cracker crumbs.
