Stuffed artichokes
Ingredients/Components
- garlic salt
- Parmesan cheese - 2 c
- olive oil - 1 item
- sweet basil - 1 Tbsp
- fresh breadcrumbs - 2 c
- Italian breadcrumbs - 2 c
- pepper as desired - 1 item
- large artichokes - 4 item
How to make stuffed artichokes:
To prepare artichokes, cut off pointed tips and cut stems so that artichoke sits flat in a large pot. Wash in warm water, drain, turn upside down and tap on cutting board to open flower in order to stuff.In a large bowl, mix all bread crumbs, cheese and spices. Drizzle in a small amount of olive oil to moisten mixture. Stuff artichokes thoroughly between leaves. Place in an upright position in a pot of water, covering 1/4 of the bottom of the artichoke. Drizzle a small amount of olive oil on the top of each artichoke. Add a dash of salt and oil in the water. Cover with a lid and let steam on low until leaves pull off easily. Check regularly to keep water covering 1/4 of the artichoke bottom. Add water if necessary. Do not let the water dry out. Cook slowly on low heat for best results.
