Ingredients/Components
- sugar - 2 Tbsp
- milk - 2 c
- salt - 1 tsp
- butter - 1 item
- water - 2 c
- vegetable oil - 1 Tbsp
- eggs, lightly beaten - 2 item
- salt and freshly ground black pepper - 1 item
- white cornmeal - 1 c
How to make spoon bread:
Position rack in center of a 425° oven. Pour oil into a 2-quart souffle dish. Put dish in oven while preparing batter. Bring water and salt to a boil in a heavy large saucepan over medium heat. Gradually whisk in cornmeal and cook until thick, stirring constantly about 2 minutes.Remove from heat; add 1 cup milk. Beat until smooth. Add eggs one at a time. Finish with remaining cup of milk. Remove hot dish from oven. Pour in batter and bake until puffed, about 50 minutes. Bread should move slightly when pan is shaken. Serve immediately with butter, salt and pepper.
