Spinach-orange toss
Ingredients/Components
- salt - 1/4 tsp
- toasted slivered almonds - 3/4 c
- lemon juice - 1 Tbsp
- salad oil - 3 Tbsp
- 8 oz - 6 c
- sliced fresh mushrooms - 1 c
- poppy seeds - 1/2 tsp
- can drained Mandarin oranges - 1 oz
How to make spinach-orange toss:
Place torn spinach in a large salad bowl. Add Mandarin orange sections and sliced mushrooms. Toss lightly. Cover and chill.For dressing, in a screw top jar, combine salad oil, lemon juice, poppy seed and salt. Cover and shake well. Chill. Shake again and pour the dressing over the spinach-orange mixture. Toss lightly to coat. Sprinkle toasted almonds on top and serve immediately. Serves 6.
