Spinach lasagna
Ingredients/Components
- pkg - 2 oz
- salt - 1 tsp
- egg, slightly beaten - 1 item
- nutmeg - 1/8 tsp
- low-fat cottage cheese
- grated Parmesan cheese - 1/3 c
- chopped onion - 2/3 c
- can tomato sauce - 1 oz
- ground beef - 1 lb
- lasagna noodles - 9 item
- garlic cloves, chopped - 2 item
How to make spinach lasagna:
Preheat oven to 350°. In large nonstick skillet brown beef, stirring occasionally. Remove beef; discard all but 1 teaspoon drippings. Add onion and saute until soft. Add garlic and continue cooking for 1 minute.Return beef to skillet; add tomato sauce, oregano and 1/2 teaspoon salt. Heat to boiling; reduce to low heat, cover and simmer for 15 minutes. Set aside.
Cook noodles; drain. In bowl, mix spinach, cottage cheese, egg, Parmesan cheese, nutmeg and salt. Lightly oil 9 x 13-inch pan. Spread spinach mixture in pan. Place cooked noodles in single layer on spinach. Top with meat sauce. Cover with foil and bake 40 to 45 minutes. Makes 8 servings.
May freeze for storage; thaw, cover and heat in preheated 350° oven for 20 to 25 minutes.
