Ingredients/Components

  • salt - 1/2 tsp
  • warm water - 1 c
  • honey - 1 Tbsp
  • oregano - 1 tsp
  • olive oil - 1 Tbsp
  • thyme - 1 tsp
  • dry yeast 1 pkg - 1 Tbsp
  • wheat flour, divided - 2 c
  • sliced mushrooms 1/2 lb - 2 c
  • bunch spinach, chopped coarsely - 1 item
  • tomato sauce or Ricotta cheese - 2 c

How to make spinach calzone:

Filling:1 tsp. olive oil2 c. sliced mushrooms (1/2 lb.)1 tsp. oregano1 tsp. thyme1 bunch spinach, chopped coarsely2 c. tomato sauce or Ricotta cheese pepperoni, salami, sausage, etc. Dough: Place honey, water and yeast into a large bowl and stir. Let mix. Let rise 8 to 10 minutes or until foaming. Stir 1 cup flour and mix. Let rise 20 minutes. Stir in oil, salt and enough flour to make kneadable. Knead until not sticky. Cover and let rise 1 1/2 hours.

Filling: Heat oil over medium heat. Cook mushrooms 10 minutes. Add oregano, thyme and spinach. Cover and cook 2 minutes. Remove cover and turn up heat or cook off liquid. Take pan off heat and set aside.

Assemble: Preheat oven to 400°. Lightly oil large baking sheet. Divide dough into 8 balls. Roll to about 1/4-inch thick. Place tomato sauce or cheese in center, within 1-inch of edge. Add spinach or any other toppings. Fold in half and pinch edges tightly to seal. Place calzones on sheet. Bake 25 minutes or until lightly browned. Makes 8.
