Spinach and penne
Ingredients/Components
- pepper - 1 item
- oregano - 1 item
- olive oil - 2 Tbsp
- tomato paste - 1 Tbsp
- white wine - 1 item
- cloves fresh garlic - 2 item
- Romano cheese - 1 item
- fresh spinach, rinsed
- scallions or 1/4 large onion - 2 item
- penne for 2
How to make spinach and penne:
Cook penne according to package directions; make it al dente.Seven minutes into the pasta cooking, heat large frypan (woks are the best thing for this). Pour in oil; let it heat. Add garlic and scallions. When scallions are soft, add spinach. Put a lid on it to let the spinach collapse.
Drain pasta and put in pan. Toss pasta and spinach together. Add white wine, oregano and pepper; toss. Make a space in the center of the pan and add the tomato paste; toss. Add Romano cheese to taste.
P.S. Sun-dried tomatoes can be added with spinach. (Soak them overnight in either white wine or olive oil.)
