Spiced zucchini bread
Ingredients/Components
- sugar - 2 c
- eggs - 3 item
- vanilla - 2 tsp
- chopped pecans - 3/4 c
- salt - 1 tsp
- soda - 2 tsp
- baking powder - 1/2 tsp
- vegetable oil - 1 c
- all-purpose flour - 3 c
- ground cinnamon
- shredded zucchini - 2 c
- can crushed pineapple, well drained - 1 oz
How to make spiced zucchini bread:
Combine flour, soda, salt, baking powder, cinnamon and nuts. Set aside. Beat eggs lightly in a large mixing bowl; add sugar, oil and vanilla. Beat until creamy. Stir in zucchini and pineapple. Add dry ingredients, stirring only until dry ingredients are moistened. Spoon batter into 2 well-greased and floured 9 x 5 x 3-inch loaf pans. Bake at 350° for 1 hour or until done. Cool 10 minutes in pan before removing. Turn out on rack and cool completely. Yield: 2 loaves.Recipe categories: Breads, American, Southern u.s..
