Spiced cantaloupe
Ingredients/Components
- sugar - 4 c
- cinnamon - 1 Tbsp
- water - 2 c
- cider vinegar - 2 c
- allspice - 1 Tbsp
- ground cloves - 1 tsp
- ripe firm cantaloupe - 4 lb
How to make spiced cantaloupe:
Remove the rind and seeds from the melon and cut into 1-inch cubes. In a large saucepan, bring the vinegar, water, sugar, cinnamon, allspice and cloves to boil. Add the melon to the saucepan and boil for 15 minutes. Remove the melon cubes and continue to simmer the syrup until it starts to thicken, about 20 minutes. Put the melon cubes back into the pan and pour the syrup and cubes into glass jars and let cool. Refrigerate until ready to serve. This will keep for 4 weeks in the refrigerator.
