Spiced cantaloupe



  • sugar - 4 c
  • water - 3 qt
  • alum - 2 tsp
  • whole cloves - 1 Tbsp
  • white vinegar - 2 c
  • whole allspice - 1 Tbsp
  • 3-inch cinnamon sticks - 4 item

How to make spiced cantaloupe:

Cut melon in half lengthwise. Remove seeds and rinds. Cut each half in quarters, then each quarter crosswise into 1/4-inch pieces. Combine water and alum. Pour over melons. Cover and let stand overnight. Drain and rinse. Combine sugar, vinegar, water and spices tied in a bag in a large kettle. Simmer uncovered for 20 minutes, gently stirring occasionally. Remove spice bag. Pack melons in jar. Pour boiling syrup over melons, making sure melons are covered. Seal each jar at once. Makes 6 to 7 pints.
