Ingredients/Components

  • salt - 1 tsp
  • flour - 2 Tbsp
  • butter - 2 Tbsp
  • egg - 1 item
  • pepper - 1/4 1/2
  • Parmesan cheese - 1/2 c
  • cottage cheese - 1 c
  • parsley - 2 Tbsp
  • medium onion, chopped - 1 item
  • grated Monterey Jack cheese
  • can diced green chillies - 1 oz
  • summer squash zucchini or yellow squash

How to make south of the border squash:

Dice squash; saute squash with onion in butter until tender-crisp. Fold in chillies, flour, salt and pepper. Place in greased 2-quart baking dish; sprinkle with Monterey Jack cheese. Combine egg, cottage cheese and parsley. Layer over cheese; sprinkle with Parmesan. Bake uncovered at 400° for 25 to 30 minutes until heated through.
