South of the border squash
Ingredients/Components
- salt - 1 tsp
- flour - 2 Tbsp
- butter - 2 Tbsp
- egg - 1 item
- pepper - 1/4 1/2
- Parmesan cheese - 1/2 c
- cottage cheese - 1 c
- parsley - 2 Tbsp
- medium onion, chopped - 1 item
- grated Monterey Jack cheese
- can diced green chillies - 1 oz
- summer squash zucchini or yellow squash
How to make south of the border squash:
Dice squash; saute squash with onion in butter until tender-crisp. Fold in chillies, flour, salt and pepper. Place in greased 2-quart baking dish; sprinkle with Monterey Jack cheese. Combine egg, cottage cheese and parsley. Layer over cheese; sprinkle with Parmesan. Bake uncovered at 400° for 25 to 30 minutes until heated through.Recipe categories: Squash, Side dish, Vegetables.
