Ingredients/Components

  • water - 1/4 c
  • margarine - 3 Tbsp
  • chopped onion - 1/2 c
  • chopped fresh parsley - 1 item
  • cloves garlic, minced - 2 item
  • sliced celery - 1 c
  • cubed potatoes - 4 c
  • can condensed chicken broth - 1 item
  • crushed thyme - 1/4 tsp
  • carrot strips - 1 c

How to make skillet potatoes:

In skillet, cook onion, celery and garlic in melted margarine until tender. Add broth, water, potatoes, carrots and thyme. Heat to boiling. Reduce heat to low. Cover; simmer 15 minutes or until potatoes are tender. Uncover. Over medium heat, simmer 5 minutes or until broth is slightly thickened, stirring often. Sprinkle with chopped parsley before serving. Makes about 5 cups, 6 servings. Contains 140 to 150 calories per serving.
