Ingredients/Components
- water - 1/4 c
- margarine - 3 Tbsp
- chopped onion - 1/2 c
- chopped fresh parsley - 1 item
- cloves garlic, minced - 2 item
- sliced celery - 1 c
- cubed potatoes - 4 c
- can condensed chicken broth - 1 item
- crushed thyme - 1/4 tsp
- carrot strips - 1 c
How to make skillet potatoes:
In skillet, cook onion, celery and garlic in melted margarine until tender. Add broth, water, potatoes, carrots and thyme. Heat to boiling. Reduce heat to low. Cover; simmer 15 minutes or until potatoes are tender. Uncover. Over medium heat, simmer 5 minutes or until broth is slightly thickened, stirring often. Sprinkle with chopped parsley before serving.
