Ingredients/Components

  • water - 7 c
  • chopped onion - 1 c
  • chopped fresh parsley - 1/4 c
  • sliced fresh mushrooms - 2 c
  • frozen peas - 3/4 c
  • cooked, cubed turkey - 1 lb
  • sliced carrots - 1 c
  • sliced celery - 1 c
  • ground pepper - 1/2 tsp
  • uncooked barley - 2/3 c
  • crushed thyme - 1/2 tsp

How to make turkey barley soup:

Combine all ingredients except peas. Bring to a boil. Reduce heat; cover and simmer for 30 minutes. Add peas and simmer 5 more minutes. Contains 150 calories per cup.
