  • salt - 1 tsp
  • vegetable oil - 2 Tbsp
  • pepper - 1/4 tsp
  • Parmesan cheese - 1/4 c
  • small onion, chopped - 1 item
  • sliced mushrooms - 1 c
  • zucchini, sliced - 1 lb
  • dried whole thyme - 1/2 tsp

How to make sauteed zucchini:

Saute onions in hot oil until tender. Add next 5 ingredients. Cook over low heat 7 minutes or until zucchini is tender. Sprinkle with cheese and serve immediately.
