Ingredients/Components

  • water - 1/2 c
  • can stewed tomatoes - 1 oz
  • oregano - 1/2 tsp
  • basil - 1/2 tsp
  • fresh parsley - 1 item
  • red wine - 1 c
  • beef broth - 5 c
  • garlic cloves - 2 item
  • small can tomato paste - 1 item
  • onions - 1 c
  • zucchini - 1 c
  • cut carrots - 1 c
  • bag frozen tortellini - 1 (15
  • Italian sausage sweet or hot - 1 lb
  • hot garlic bread - 1 item

How to make sausage soup:

Saute Italian sausage, onion and garlic cloves. Add stewed tomatoes, beef broth, water, red wine, carrots, basil, oregano and tomato paste. Cook for 1 hour.

One hour before serving, add zucchini, frozen tortellini and fresh parsley. Serve with hot garlic bread.
