Ingredients/Components

  • milk - 1 c
  • salt - 1/2 tsp
  • flour - 2 Tbsp
  • nutmeg - 1/4 tsp
  • melted butter - 2 Tbsp
  • stiffly beaten egg whites - 2 item
  • dash of pepper - 1 item
  • well beaten egg yolks - 2 item
  • canned salmon, flaked - 1 (1

How to make salmon souffle:

Mix butter, flour and milk over low heat on stove (makes a white sauce). Slowly add small amount of white sauce to egg yolks and stir into remaining sauce. Add salt, nutmeg, pepper and salmon. Fold in egg whites. Bake in a greased casserole dish at 325° for 45 minutes.
