Ingredients/Components

  • eggs - 2 item
  • milk - 1/2 c
  • salt - 1/2 tsp
  • butter - 1/4 c
  • lemon juice - 1/3 c
  • pepper - 1/4 tsp
  • soft bread crumbs - 2 c
  • stalks celery - 4 item
  • parsley - 3 Tbsp
  • mushrooms, sliced - 1/2 lb
  • lemon rind, grated - 3 tsp
  • large onion - 1 item
  • cans salmon - 2 lb

How to make salmon loaf:

Flake the salmon, reserving liquid. Chop onion and celery; saute in butter about 10 minutes. Add mushrooms and saute another 5 minutes. Combine cooked vegetables with bread crumbs. Add salmon, liquid, salt, pepper, parsley, lemon rind and lemon juice. Beat eggs lightly and add to salmon mixture with the milk. Put salmon mixture in a large, greased loaf pan and bake at 375° for 50 minutes. 6 to 8 servings.
