Salmon loaf
Ingredients/Components
- eggs, beaten - 2 item
- lemon juice - 2 Tbsp
- pepper - 1/8 tsp
- soft bread crumbs - 2 c
- small onion, chopped - 1 item
- freshly chopped parsley - 2 Tbsp
- can salmon, undrained - 1 1/2
How to make salmon loaf:
Preheat oven to 350°. Spray an 8 1/2 x 4 1/2 x 2 1/2-inch loaf with vegetable spray. In a large bowl, flake the salmon, removing bones and skin. Add remaining ingredients; mix well. Press into a loaf pan. Bake for 50 to 60 minutes until golden brown or until a toothpick comes out clean. Let stand 5 minutes; loosen eggs and lift out of pan onto serving plate.
