Ingredients/Components

  • stick margarine - 1/2 item
  • margarine - 1 Tbsp
  • can Ro-Tel tomatoes - 1 oz
  • can cream of mushroom soup - 1 oz
  • onion, chopped - 1/2 c
  • mushrooms, sliced - 1/4 lb
  • can Cheddar cheese soup - 1 oz
  • soup can water - 1/2 item
  • to 12 small potatoes, peeled and sliced - 10 item

How to make rotel potatoes:

In skillet, saut mushrooms and onions until golden brown.

Preheat oven to 350°. In a bowl, mix mushrooms, onions, Ro-Tel tomatoes, Cheddar cheese soup, cream of mushroom soup, water and salt and pepper to taste. Pour mixture over potatoes in a greased baking dish. Place margarine slices on top and bake for 1 hour or until potatoes are tender.
