  • flour - 3 c
  • soda - 2 tsp
  • cocoa - 3/4 c
  • buttermilk - 1 c
  • flaked coconut - 1/2 c
  • baking powder - 2 tsp
  • vegetable oil - 1 c
  • egg - 1 item
  • semi-sweet chocolate pieces - 1 c
  • cream cheese, softened
  • hot coffee or water - 1 c

How to make ring-of-coconut fudge cake:

Filling:1 pkg. cream cheese, softened1/4 c. sugar1 tsp. vanilla1 egg1/2 c. flaked coconut1 c. semi-sweet chocolate pieces Generously grease and flour a 10-inch tube pan or Bundt pan. Prepare filling and set aside. Beat until smooth the cream cheese, sugar, vanilla and egg. Add coconut and chocolate pieces.

In large bowl, combine sugar, oil and eggs. Beat 1 minute at high speed. Add remaining ingredients, except filling and nuts. Beat 3 minutes at high speed, scraping bowl. Stir in nuts. Pour 1/2 batter into prepared pan. Carefully spoon prepared filling over batter; top with remaining batter. Bake at 350° for 70 minutes until top springs back when lightly touched in center. Cool upright in pan for 15 minutes. Remove from pan; cool completely.
