Praline pumpkin pie
Ingredients/Components
- sugar - 1 c
- eggs - 3 item
- packed brown sugar - 1/3 c
- milk - 1/4 c
- salt - 1/4 tsp
- flour - 1 c
- egg, slightly beaten - 1 item
- water - 1 item
- dash of salt - 1 item
- canned pumpkin
- ground cinnamon - 1 tsp
- ground ginger - 1/2 tsp
- ground nutmeg - 1/2 tsp
- can evaporated milk - 1 oz
- toasted chopped pecans - 1/2 c
- chopped pecans optional - 1/2 c
- shortening or lard - 1/3 c
- melted butter/margarine - 3/4 c
- margarine/butter - 3 Tbsp
- bourbon/rum - 2 Tbsp
- Line a 9-inch pie plate
How to make praline pumpkin pie:
Prepare and roll out pastry. Line a 9-inch pie plate. Trim pastry 1/2-inch beyond edge of pie plate. Flute edge high. Do not prick. Line with a double thickness of foil. Bake at 450° for 8 minutes. Remove foil. Bake 4 to 5 minutes more or until set and dry. Cool.Combine 1/3 cup brown sugar and margarine or butter in a saucepan. Cook and stir over medium heat until margarine is melted and brown sugar is dissolved (mixture may appear separated). Stir in pecans. Spread over bottom of pastry shell; cool to room temperature.
For filling, combine pumpkin, 2/3 cup brown sugar and spices. Add eggs. Beat lightly with a rotary beater or fork. Gradually stir in evaporated milk, milk and bourbon/rum. Mix well.
Place pie shell on oven rack; pour in filling. Cover edge with foil. Bake in a 375° oven for 25 minutes. Remove foil; bake 20 to 25 minutes more until a knife inserted near the center comes out clean. Cool on a wire rack. Cover and chill to store. Add egg, flour and salt. Pour mixture over apples being sure to cover the apples. Bake at 350° for 1 hour. This is great served with ice cream.
