  • cinnamon - 1 tsp
  • vanilla - 1 tsp
  • flour - 1 c
  • brown sugar - 1 c
  • cornstarch - 2 Tbsp
  • water - 1 c
  • rolled oats - 3/4 c
  • butter, melted - 1/2 c
  • Press down in a 9 x 13-inch pan

How to make rhubarb crisp:

Combine crust ingredients until crumbly. Press down in a 9 x 13-inch pan. Reserve some for top. (We double the crust.)Sauce:1 c. sugar2 Tbsp. cornstarch1 c. water1 tsp. vanilla Mix Sauce ingredients. Bring to boil, stirring constantly until thick. Put 4 cups cut up rhubarb in the crust-lined pan and pour hot sauce over. Sprinkle on reserved crumbs. Bake at 325° for 40 minutes or until bubbly and the crust is browned.
