Ingredients/Components

  • sugar
  • cinnamon - 1 tsp
  • eggs - 2 item
  • milk - 1/3 c
  • salt - 1 tsp
  • chopped nuts - 1/2 c
  • flour - 2 c
  • brown sugar - 1/2 c
  • coconut - 3/4 c
  • soda - 1 tsp
  • oleo - 4 Tbsp
  • cloves - 1/4 tsp
  • allspice - 1/2 tsp
  • salad oil - 1/2 c
  • finely chopped rhubarb - 2 c
  • Combine oil, eggs and milk

How to make rhubarb coffee cake:

Place all dry ingredients into large bowl and set aside. Combine oil, eggs and milk. Beat together and add to dry ingredients. Fold in rhubarb. Pour into greased 9 x 13-inch pan.Topping:1/2 c. flour1/2 c. brown sugar4 Tbsp. oleo3/4 c. coconut1/2 c. chopped nuts Bake in a 350° oven for 50 minutes.
