Ingredients/Components

  • cinnamon - 1 tsp
  • sour cream - 1 c
  • salt - 1/2 tsp
  • flour - 2 c
  • brown sugar
  • baking soda - 1 tsp
  • egg - 1 item
  • shortening - 1/2 c
  • chopped walnuts - 1/2 c
  • oleo - 1 Tbsp
  • chopped rhubarb
  • Add egg

How to make rhubarb coffee cake:

Cream sugar and shortening. Add egg. Combine flour, sugar, baking soda and salt. Add alternately with sour cream to creamed mixture. Fold in rhubarb. Spread in greased 13 x 9 x 2-inch pan.Topping:1/4 c. sugar1/4 c. brown sugar1/2 c. chopped walnuts1 Tbsp. oleo1 tsp. cinnamon Combine topping ingredients. Sprinkle over batter. Bake at 350° for 45 to 50 minutes.
