Rhubarb coffee cake
Ingredients/Components
- egg - 1 item
- tsp salt - 1/2 item
- c flour - 2 item
- tsp cinnamon - 1 item
- tsp baking soda - 1 item
- c shortening - 1/2 item
- c chopped nuts - 1/2 item
- 1/2 c sugar - 1 item
- c buttermilk or sour milk - 1 item
- 1/2 c finely chopped rhubarb - 1 item
- Optional Topping:1/2 c sugar
How to make rhubarb coffee cake:
Optional Topping:1/2 c sugar1 tsp cinnamon1/2 c chopped nuts Cream together the shortening and sugar. Add egg, mix. Sift together dry ingredients and add to mixture. Add rhubarb. Sprinkle on topping. Pour into greased and floured pan. I use Pam instead of shortening for the pan. Bake in 350 degree oven for 35 to 40 minutes or until knife comes out clean.Recipe categories: Breads, Fruit, Coffee cakes.
