Ingredients/Components

  • egg - 1 item
  • tsp salt - 1/2 item
  • c flour - 2 item
  • tsp cinnamon - 1 item
  • tsp baking soda - 1 item
  • c shortening - 1/2 item
  • c chopped nuts - 1/2 item
  • 1/2 c sugar - 1 item
  • c buttermilk or sour milk - 1 item
  • 1/2 c finely chopped rhubarb - 1 item
  • Optional Topping:1/2 c sugar

How to make rhubarb coffee cake:

Optional Topping:1/2 c sugar1 tsp cinnamon1/2 c chopped nuts Cream together the shortening and sugar. Add egg, mix. Sift together dry ingredients and add to mixture. Add rhubarb. Sprinkle on topping. Pour into greased and floured pan. I use Pam instead of shortening for the pan. Bake in 350 degree oven for 35 to 40 minutes or until knife comes out clean.
