- cinnamon - 1 tsp
- sour cream - 1 cup
- salt - 1/2 tsp
- butter - 1 Tbsp
- baking soda - 1 tsp
- egg - 1 item
- cup chopped pecans - 1/2 item
- cups flour - 2 item
- cup packed brown sugar - 1/4 item
- cup shortening - 1/2 item
- 1/2 cups packed brown sugar - 1 item
- 1/2 cup chopped rhubarb - 1 item
- Topping:1/4 cup sugar
How to make rhubarb coffee cake:
Topping:1/4 cup sugar1/4 cup packed brown sugar1/2 cup chopped pecans1 Tbsp. butter1 tsp. cinnamon In a mixing bowl, cream sugar and shortening. Add egg. Combine flour, soda, and salt; add alternately with sour cream to the creamed mixture. Fold in rhubarb. Spread in a greased 9x13-inch pan. Combine all topping ingredients and sprinkle over batter.
