Ingredients/Components

  • salt - 1 item
  • flour - 1 item
  • lard - 1/2 lb
  • pepper - 1 item
  • cayenne - 1 item
  • small fryer, cut up - 1 item
  • squeezed garlic - 1 Tbsp

How to make real fried chicken:

Wash chicken pieces and pat dry. Sprinkle each piece with salt, pepper, cayenne and garlic and rub it in. Cover and refrigerate for at least 2 to 3 hours before cooking. Heat the lard in a large iron skillet to 375° or until it just starts to smoke lightly. Just before frying, dredge pieces lightly in flour and fry 2 to 3 pieces at a time. Breasts take 12 to 15 minutes, drumsticks and backs 9 to 10 minutes. Pieces can be kept warm in a 200° oven while frying others.
