- vanilla - 1/2 tsp
- pkg - 1 oz
- milk - 2 tsp
- chopped nuts - 1 c
- butter
- water
- coconut - 2 c
- oil - 1/4 c
- powdered sugar - 2 c
- instant vanilla pudding mix
- yellow or lemon cake mix - 1 pkg
How to make rave review coconut cake:
Frosting:4 Tbsp. butter2 c. powdered sugar2 c. coconut1/2 tsp. vanilla1 (8 oz.) pkg. cream cheese2 tsp. milk Blend cake mix, pudding mix, water, eggs and oil in large bowl. Beat at medium speed 4 minutes. Stir in 2 cups coconut and nuts. Pour into 2 greased and floured 9-inch round pans. Bake 35 minutes at 350°.To make frosting, melt 2 tablespoons butter in skillet. Add coconut; stir constantly over low heat until golden brown. Spread on absorbent paper. Cream additional 2 tablespoons butter with cream cheese. Add milk, vanilla and coconut. Use small amount of frosting between cake layers and the remainder to frost the cake.
