- box yellow cake mix - 1 item
- box 4 servings vanilla instant pudding - 1 item
- water
- walnuts or pecans - 1 c
- eggs - 4 item
- oil - 1/4 c
- coconut - 2 c
- margarine
- pkg - 1 oz
- sifted powdered sugar
- milk - 2 tsp
- vanilla - 1/2 tsp
How to make coconut cake:
Icing:4 Tbsp. margarine1 (8 oz.) pkg. cream cheese3 1/2 c. sifted powdered sugar2 c. coconut2 tsp. milk1/2 tsp. vanilla Blend cake mix, pudding mix, water, eggs and oil in large mixing bowl. Beat at medium speed for 4 minutes. Stir in walnuts and coconut. Pour into 3 greased and floured 9-inch layer cake pans. Bake at 350° for 35 minutes.Icing: Melt 2 tablespoons margarine in pan. Add coconut; stir over low heat until golden brown. Spread coconut on paper towel to cool. Cream 2 tablespoons margarine with cream cheese. Add milk and sugar slowly, beating well. Add vanilla. Stir in 1 3/4 cups coconut. Spread on tops and sides of cake. Sprinkle with remaining coconut.
